Cheesy Scrambled Eggs

INGREDIENTS

100g plain cottage cheese
4 large egg whites and 2 whole large eggs
4-5 raw mushrooms
5-10 black olives (optional)
1 small onion
1/4 tsp pepper , red or cayenne (optional)
1 cup raw spinach (heat in microwave if you prefer it warm)
Sliced cucumber and/or tomato

DIRECTIONS

Beat egg whites with whole eggs with fork or whisk. Add cottage cheese, salt, red pepper. Spray non stick pan with olive oil. Preheat the pan, pour in the eggs, when the eggs, add chopped olives, onions, and mushrooms. Cook the eggs how you like scrambled eggs. I eat the eggs on a bed of baby spinach and sliced cucumbers and/or tomatoes.

This makes about 2 protein serves, so share or 1/2 the recipe for one serve.
