Salmon Burgers

Makes 5 servings

3 large eggs, lightly beaten
3 tablespoons lemon juice
2 tablespoons minced shallots
2 tablespoons mustard seeds
1 garlic clove, minced
5 (125 gram) skinless salmon fillets, flaked well
Sea salt and ground pepper

Preheat frypan or grill to high.

Combine all ingredients and mix well. Season to taste with salt and pepper.

Form into 5 patties, and place on a baking sheet. Grill or fry for 5 to 7 minutes on each side or until the burgers are justcooked through. Be careful not to burn them.
