Salmon or Tuna Quiche
Ingredients for 2 servings:
Cooking spray
2-3 whole eggs
1/4 cup plain yogurt
2 Tbsp flour
3/4 cup broccoli florets
1/4 cup chopped onion
200g canned boneless, salmon or tuna, drained
1 tsp fresh basil or other herb to taste
Salt and pepper to taste
Directions
Heat oven to 190C and coat an 8 or 9-inch pie pan with cooking spray. Whisk eggs in a medium-sized bowl. Add yogurt, onion, flour, herbs and salt and pepper and mix well. Stir in broccoli and salmon. Spread evenly in pie pan. Bake for 20 to 25 minutes or until toothpick comes out clean.
This makes 2 serves for a full meal. Add salad or vegies
