Thai Fish Cakes
Ingredients
600gms white fish diced
3/4 to 1 tbsp green curry paste
juice of 1 lime or lemon
2 large egg whites or 3 small
2-3 shallots chopped (green part)
sea salt and pepper
Place diced fish in a food processor with the rest of the ingredients and blend to semi smooth consistency. Don't blend too much.
Roll into small flat balls. Bake on baking paper in oven at 180 C or cook on slightly oiled grill plate. Garnish with coriander if you wish
You can also roll the fish cakes in sesame seeds and coriander seeds for additional flavour.
This makes 4 serves of protein, so share with you family, or eat cold for meals tomorrow. They also reheat well, but quickly in the microwave.
